The added step is worth the time: Brining your own natural or organic turkey will make for an extra-juicy bird, adding flavor without a lot of extra sodium. (If you've already bought a normal or kosher turkey, you can skip the brining steps to avoid oversalting your bird.) A clean cooler comes in handy for brining if you don't have a large enough stockpot available.
