- 4 cups cubed seeded watermelon
- 2 tablespoons lemon juice
- 2 tablespoons chopped fresh mint
- Few drops of stevia (optional)
[h=3]Directions[/h]
- Blend watermelon, lemon juice, 1 Tbsp mint, and stevia in a blender until smooth.
- Sprinkle chopped mint on top of bowls of soup.
